Open Moroccan Beef Burgers

Add an exotic twist to a traditional burger!

Patties can be made up to one day ahead. Keep, covered, in the fridge. Or freeze in a single layer on a tray covered with baking paper. When frozen, store in a freezer-proof container for up to two months.

Method

1.

To make patties, combine beef, couscous, onions, seasoning and egg in a large bowl. Season with salt and pepper. Mix well.

2 Divide mixture into four equal portions. Shape portions into patties. Flatten to about 12cm in diameter.

3 Heat oil in a large, non-stick frying pan over a medium heat. Add patties. Cook for about 6 minutes on each side, or until browned and cooked through. Remove.

4 To serve, top base of rolls with lettuce, patties, beetroot and tomato. Dollop with tzatziki. Replace tops of rolls before serving.
