Step 1
Place spinach in a heatproof bowl. Cover. Microwave on High for 30 secs – 1 min, until just wilted. Drain.
Step 2
Heat a lightly oiled, large frying pan over a medium-high heat. Add ham. Cook, turning, for 1-2 mins, until lightly golden. Transfer to a plate.
Step 3
Add chicken to same hot pan. Cook for about 2 mins on each side, until golden and just cooked. Pour sauce around chicken. Top chicken with ham, spinach and mozzarella. Cover pan with lid.
Step 4
Cook over a medium heat for 1-2 mins, until sauce is hot and cheese is melted.
Step 5
Serve with salad leaves.
