TIP: It’s perfect to add to sparkling wine, lemonade, or iced water. It’s especially delicious blended with ice cubes, vodka, fresh pineapple or other fresh fruit for a frozen daiquiri style cocktail.

Step 1
Place the cups of water and sugar in a medium saucepan. Stir over a low heat until sugar is dissolved. Bring to boil. Remove from heat.
Step 2
Stir in the fresh mint leaves. Leave to cool for about 30 minutes.
Step 3
Pour mixture into a blender and blend until mint is finely chopped. Pour through a sieve into a large jug. Pour into clean, glass jars or bottles. Store in the fridge for up to two weeks.
