This Malteser White Choc Cheesecake recipe is the ultimate dessert

Method

Step 1

Invert the base of a 23cm round springform pan (base measures 22cm). Grease and line the base with baking paper.

Step 2

Process biscuits and 1/2 cup of the Maltesers in a food processor until finely crushed. Add butter. Process until combined. Press over the base and three-quarters of the way up the side of the prepared pan. Refrigerate while preparing filling.

Step 3

Make filling. Place chocolate in a medium heatproof bowl. Sit the bowl over a saucepan of simmering water. Stir until melted and smooth. Remove from heat. Cool to room temperature.

Step 4

Beat cream cheese and sugar in a large bowl of an electric mixer until fluffy. Gradually beat in melted chocolate until combined.

Step 5

Beat cream in a small bowl of an electric mixer until soft peaks form. Fold into cream cheese mixture until just combined. Spoon into biscuit crust. Smooth over the top. Cover. Refrigerate overnight, or until firm.

Step 6

Remove the side of the pan. Transfer the cheesecake to a serving plate. Spoon whipped cream over top. Sprinkle with remaining chopped and whole Maltesers. Dust with cocoa.
