TIP – Almond milk can be replaced dairy milk or another non-dairy milk.

Step 1
Whisk yoghurt, cottage cheese, eggs, almond milk and syrup in a large bowl to combine.
Step 2
Add combined sifted flour and baking powder to yoghurt mixture and whisk until well combined.
Step 3
Grease a large, non-stick frying pan with melted butter and heat over a medium heat. Pour ¼ cup of pancake mixture into pan. Repeat to make three pancakes.
Step 4
Cook for about 3 mins, or until bubbles appear on surface. Turn over and cook for a further 2-3 mins, or until golden underneath. Transfer to a plate. Repeat with remaining mixture to make 16 pancakes in total.
Step 5
Serve warm pancakes with blueberries and extra maple syrup.
