This is the perfect treat this Christmas, without compromising on flavour.

TIP – Leave lining paper intact. Wrap in plastic wrap, then foil. Store in a container for up to 2 weeks. Refrigerate in hot weather.

Step 1

Mix fruit, dates, apple, rind, juice, jam and brandy in a large glass bowl to combine. Cover. Stand overnight.

Step 2

Grease a round 20cm x 7cm deep cake pan. Line base and side with three layers of baking paper, extending paper 5cm above pan edge.

Step 3

Beat butter and sugar in small bowl of an electric mixer until light and fluffy. Beat in eggs, one at a time, until just combined. Stir into fruit mixture (mixture will appear curdled at this stage). Sift over combined flour, spice and soda. Add almond meal. Stir until well combined. Spoon into prepared pan. Smooth top. Decorate with blanched almonds.

Step 4

Cook in a 150°C preheated oven for about 1 hour 50 mins, or until a skewer inserted in centre comes out clean. (Cover loosely with foil during cooking if top starts to over-brown.)

Step 5

Brush extra brandy over top of hot cake. Place a sheet of baking paper over top, then wrap hot cake in pan, in a clean tea towel. Leave overnight to cool completely before turning out.
