Method
Step 1
Combine all ingredients in a medium bowl. Season with salt and pepper. Mix well.
Step 2
Cut rolls horizontally in half. Spread filling evenly over the base of each roll. Top with cheese. Replace tops.
Step 3
Toast rolls, in two batches, in a heated, large sandwich press for about 7 minutes, or until golden and cheese is melted. Remove from the press. Open the tops and fill with spinach.
Step 4
Serve immediately.
