4-Ingredient Choc Mint Cookies

A block of chocolate, packet cake mix, eggs and butter is all you need!

TIP! Cookies can be made up to one week ahead. Store in an airtight container. For a change, try replacing the mint crème chocolate with a 180g block Caramello.

1.

Grease and line two large oven trays with baking paper.

Place cake mix in a large bowl, reserving frosting for another use. Stir in egg and butter. Add chocolate. Stir until evenly combined.

Roll level tablespoons of mixture into balls. Place about 4cm apart on prepared trays.

Cook in a moderate oven (180C) for about 18 minutes, or until lightly browned. Remove. Stand on trays for 15 minutes until firm. Transfer to wire racks to cool completely.
