What is granulated sugar in Australia?

In Australia, granulated sugar is labelled as white sugar and is most commonly used in baking and as an additive to hot beverages such as tea and coffee.

It has a sweet taste and you can recognise it by its large white granules. Icing sugar, on the other hand, is powdered granulated sugar which has a superfine, powdery consistency.

Is caster sugar different from granulated sugar?

Granulated sugar has a grain size of about 0.5mm across, whereas caster sugar granules are finer measuring around 0.35mm.

Caster sugar also known as superfine sugar is ground finer which means that they dissolve faster and their sharp edges lend them to cutting through fat, which is why caster sugar is used so frequently in baking.

The term ‘caster’ is British which describes sugar that is fine enough to fit through a sugar caster.
