This feather-light golden crown is a visually spectacular way to finish off a dessert.

Method

1.Combine sugar, water and glucose in a saucepan over medium heat. Stir until sugar dissolves and mixtures comes to the boil. Simmer, without stirring, until mixture turns golden – about 8 minutes.
2.Remove from heat and place base of saucepan in a sink full of cold water, to cool it down quickly. Don’t cool it too much as you want the toffee to still be runny and workable.
3.Place a large mixing bowl on the work surface and dip two forks, held back-to-back, in the hot toffee. Working quickly, drizzle the hot toffee across the bowl – creating thin strands. Once you have enough for a nest, and before the toffee has hardened, grab the strands together and form into a loose nest. Set aside and repeat with remaining toffee. If the the toffee starts to get too thick, reheat it briefly on the stovetop.
4.Keep an airtight container until ready to use.
