2 eggs, lightly beaten
250 g butter
¾ cup sugar
3 tbsp cocoa powder
1 vanilla essence
2 x 500 g plain sweet biscuits, crushed into chunks
3 ¼ cups icing sugar
2 tbsp cocoa powder
50 g melted butter
3 tbsp boiling water
1 tsp vanilla extract
- Line a 30cm x 24cm sponge roll or baking tin with baking paper.
- Place eggs, butter, sugar, cocoa and vanilla in a pot over low heat. Stir constantly, removing mixture from heat just before it comes to a simmer. Mix in crushed biscuits. (To crush biscuits, place them in a sealed plastic bag and bash with a rolling pin until chunky crumbs. Do not crush in a food processor as they will be too fine.) Press mixture firmly into prepared tin.
- Make the chocolate icing by mixing together all ingredients and beat until smooth.
- Ice with Chocolate Icing and, when set, cut into pieces.
