Whip up this flavoursome Sweet and Sour Pork Stir-Fry in 20 minutes

TIP: Pork mince can be replaced with chicken mince. Try serving with noodles instead of rice for a change.

Method

Step 1

Heat a lightly oiled, large wok over high heat. Add pork in two batches. Stir-fry, breaking up mince for 2-3 mins, or until browned. Remove from wok.

Step 2

Heat same, lightly oiled, hot wok over medium-high heat. Add capsicum and carrot.

Step 3

Stir-fry for 3-4 mins, or until just tender. Return pork to wok with sauces, pineapple and onions. Stir-fry for a further 1-2 mins, or until sauce is boiling and stir-fry is hot. Remove from heat.

Step 4

Garnish with extra onions. Serve with rice.
