These Sticky Plum and Ginger Pork Meatballs are a weeknight winner

Ingredients

Method

Step 1

Combine marinade, soy sauce, honey and chilli in a jug. Set aside.

Step 2

MEATBALLS Combine all ingredients in a large bowl. Season with salt and pepper. Roll level tablespoons of mixture into balls (makes 24).

Step 3

Lightly spray a 7-litre air fryer basket with cooking oil. Place meatballs in basket. Air-fry on 190C for 10 mins, until browned.

Step 4

Transfer meatballs to a clean, large heatproof bowl. Add 2 tbsp of the sauce mixture. Toss to coat. Return to air fryer basket. Air fry on 180C for 3-4 mins until meatballs are cooked and well-glazed. Return to same bowl.

Step 5

Meanwhile, heat remaining sauce mixture with 1 tbsp water in a small saucepan over a medium heat until hot.

Step 6

Drizzle heated sauce mixture over meatballs. Cover to keep warm.

Step 7

Add pak choy to air fryer basket. Spray with cooking oil. Air fry on 180C for 3-4 mins, until just tender. 

Step 8

To serve, arrange rice, meatballs and pak choy on plates. Drizzle over any sauce mixture left in bowl. Sprinkle with sesame seeds.
