This recipe is an extract from Jock Zonfrillo’s new book, Recipes to Remember, published posthumously by his family.
The book was Jock’s final passion project that he was unable to complete before his sudden passing in 2023. Jock’s widow, Lauren, was determined to finish it for him and share with his fans.
“This one’s from us – the little crew who sat on the kitchen stools, learning, chatting and eating with Dad,” his family shared in a post to Jock’s Instagram account in June. “The kitchen was really the heart of our home. Dad loved cooking, and he loved having fun with it.”

TIP – Mortadella and pancetta are Italian cured meats. Scamorza is an Italian cheese made from cow’s milk. These ingredients can be purchased from larger supermarkets, delis and independent grocers.

Preheat a woodfired oven to 300°C or a conventional oven to 180°C.
Slice the focaccia in half lengthways so you have a large piece of focaccia that is about as thick as a pizza base. Drizzle generously with olive oil then toast it up – it will take a couple of minutes in the woodfire or about 15 minutes in the oven.
When it’s crispy and starting to toast, it’s time to bring it out.
Garnish it with whatever toppings you like and bake for 2–5 minutes so the cheese can melt and slightly brown. This is a good one to do with the kids.
