TIP: For an apple and berry pudding, add a can of sliced apple pie fruit to berry mixture.

Method

Step 1.

Combine strawberries, raspberries, jam and 2 tbsp water in a bowl. Spread over the base of an ovenproof dish (8-cup capacity).

Step 2.

To make the Victoria Sponge, beat butter, sugar and vanilla in small bowl of an electric mixer until pale and creamy. Add eggs, one at a time. Beat until combined. Transfer to a large bowl. Stir in sifted flour and baking powder with milk in two batches until combined. Spread mixture evenly over fruit in dish.

Step 3.

Cook in a 180°C preheated oven for 45-50 mins or until cooked in centre when tested with a skewer, covering with foil after 30 mins if over browning.

Step 4.

Dust with icing sugar and cinnamon. Serve warm with cream.
