Step 1.

Line six holes of a 12-hole (â…“-cup capacity) muffin pan with large paper cases.

Step 2.

Place cupcake mix in a large bowl. Do not follow instructions on packet. Add coconut milk. Whisk until combined. Divide among paper cases (about â…“-cup in each).

Step 3.

Cook in a 160°C preheated oven for about 30 mins, or until a skewer inserted into the centre comes out clean. Remove. Stand in pan for 10 mins. Transfer to a wire rack to cool.

Step 4.

Serve cupcakes warm or at room temperature dusted with sifted icing sugar (optional).
