Method

Step 1

Trim chicken. Halve crossways. Season with salt and pepper.

Step 2

Heat an oiled, large, flameproof casserole dish (14-cup capacity) over a high heat. Add chicken in two batches. Cook for about 2 mins on each side, or until browned. Remove.

Step 3

Add bacon, onion, celery and garlic. Cook, stirring occasionally, over a medium heat until soft. Stir in paste and flour. Cook, stirring, for 1 min. Add stock. Bring to boil. Return chicken to dish with carrots. Cover with lid.

Step 4

Cook in a 160°C preheated oven for about 1 hour, or until chicken is cooked. Remove from oven.

Step 5

Serve with beans.
