Roasted Tomatoes with Greek Salsa

The perfect side dish when entertaining!

TIP: Cooked tomatoes and the baking paper can be transferred to a serving dish before topping with salsa. These tomatoes are the perfect partner for grilled lamb.

Prep: 15 mins – Cook: 30 mins – Easy – Serves 6

Ingredients

10 Roma tomatoes (750g), halved lengthways

2 tblsps olive oil,plus extra to drizzle

1 clove garlic, crushed

Lemon wedges, to serve

GREEK SALSA
¾ cup roasted capsicum strips, chopped

½ cup Kalamata olive wedges

100g Greek feta, coarsely crumbled

¼ cup fresh oregano leaves

Method

1 Line a large oven tray with baking paper.

2 Arrange tomatoes, cut-side up in a single layer, on prepared tray. Brush with combined oil and garlic. Season with salt and pepper.

3 Cook in a hot oven (200C) for 25 to 30 minutes, or until tomatoes are just starting to collapse and are lightly browned.

4 Meanwhile, make salsa by combining all ingredients in a large bowl.

5 To serve, spoon salsa over warm tomatoes. Drizzle with a little extra oil. Season with pepper. Serve with lemon wedges.
