Step 1
Trim excess fat from chicken. Cut into 2cm-thick slices. Toss with half the oil in a bowl.
Step 2
Heat a large, non-stick wok over a high heat. Add chicken in two batches. Stir-fry for 3 to 5 minutes, or until browned and cooked through. Remove.
Step 3
Heat the remaining oil in the same hot wok. Add carrots and broccolini. Stir-fry for 3 to 4 minutes, or until vegetables are just tender.
Step 4
Return chicken to wok with garlic, sauce and noodles. Stir-fry for a further 2 minutes, or until hot.
Step 5
Serve topped with onions.
