Step 1
Place eggs in a shallow dish. Place breadcrumbs on a large plate. Dust chicken in flour seasoned with salt and pepper. One at a time, dip in egg, then coat in breadcrumbs, pressing on evenly.
Step 2
Heat enough oil in a large frying pan to shallow-fry over a medium-high heat. Add chicken. Cook for about 3 mins on each side, or until golden brown and cooked through. Drain on paper towel.
Step 3
SATAY SAUCE – Place coconut milk and peanut butter in a small saucepan over a low heat. Cook, stirring, until hot. Remove from heat. Whisk in soy sauce, juice and 2 tbsp water.
Step 4
Combine pineapple, coleslaw and coriander in a large bowl.
Step 5
Serve chicken with pineapple slaw, satay sauce and lime wedges. Garnish with extra coriander leaves.
