BEETROOT TZATZIKI
Method
Step 1
To make the Beetroot Tzatziki, pat the beetroot dry with a paper towel, then chop finely. Transfer to a bowl. Stir in tzatziki.
Step 2
Heat enough oil in a large non-stick frying pan to shallow fry over a medium heat. Add chicken in two batches. Cook for about 5 mins on each side, or until lightly browned and cooked through. Remove. Cover with foil to keep warm.
Step 3
Serve chicken with beetroot tzatziki and combined salad leaves and cucumber.
