TIP – If you don’t have an ovenproof frying pan, transfer mixture to an ovenproof dish before step 4.

Step 1.
Cook gnocchi according to packet directions, until tender. Drain well.
Step 2.
Heat a lightly oiled, medium ovenproof frying pan (about 26cm diameter x 5cm deep) over a medium-high heat. Add bacon. Cook, stirring, for about 4 mins, or until crisp.
Step 3.
Stir in pasta sauce and mustard. Bring to boil. Add gnocchi and parsley. Stir to coat. Dollop ricotta over the top. Sprinkle with parmesan. Transfer frying pan to oven.
Step 4.
Cook in a 200°C preheated oven for about 15 mins, or until lightly browned. Remove.
Step 5.
Garnish with extra parsley. Serve with salad leaves.
