How to recreate Carrie Bickmore’s ultimate birthday “castle cake”

The mum-of-three decorated the cake with lollies and ice-cream cone towers – and while it looks absolutely perfect – she revealed it wasn’t her first attempt.

In a side-by-side Instagram post, Carried shared the final result, in all its pink castle glory, but then also attached the not so glamorous first try of a unicorn cake.

“Evie’s castle cake, much better than the unicorn cake I attempted on Saturday. Looked more like an angry, stumpy monster,” Carrie captioned the post.

To her credit, the unicorn cake does look rather appealing – so long as it’s not dubbed as the fictional animal – but it was the castle cake that had everyone wanting a slice.“I’ve been looking forward to seeing this creation,” one user wrote.“That Unicorn is hilarious, love the Castle,” added another.“That unicorn cake did make me giggle with your description but what an awesome mum to make those cakes!!!! Is there anything you can’t do?!” a third fan commented.

And so, if you would like to brave an attempt at the cake yourself, we’ve rounded up an easy to follow recipe to replicate it for your next birthday celebration.It will require about an hour and 15 minutes of cooking time, so make sure to plan this ahead should you wish to create a “castle for a princess”.For the full recipe from Women’s Weekly Food, scroll down.

Ingredients3 x 470g packaged buttercake mix 375 gram butter 4 1/2 cup (720g) icing sugar 1/2 cup (125ml) milk Pink food colouring 2 x 250g packets vanilla creams (biscuits) 5 waffle ice-cream cones 130 gram packet candy jewellery 4 heart-shaped lollipops flags 30 sugar cubes 6 ice-cream wafers 2 pink mallow bakesMethodPreheat oven to 130°C/260°F. Grease and flour deep 23cm (9-inch) square cake pan and deep 15cm (6-inch) round cake pan.Make cake according to directions on packet. Pour enough mixture into each pan to fill to three-quarters. Use any leftover mixture to make cupcakes for another occasion. Bake cakes about 1¼ hours. Stand cakes in pans 5 minutes; turn, top-side up, onto wire racks to cool.Meanwhile, to make butter cream, beat butter in small bowl with electric mixer until as white as possible. Beat in sifted icing sugar and milk, in two batches.Tint butter cream pink. Level cake tops, turn square cake, cut-side down onto 36cm (14-inch) square prepared cake board (allowing space for drawbridge); secure with a little butter cream.Using one of the biscuits as a guide, cut rounds out of each corner of square cake with a small serrated knife.Secure round cake to square cake with a little butter cream; cover whole cake with butter cream. Stack six biscuits, joining each with butter cream, in each of the cut-out corners of the cake.Using scissors, trim waffle cones to sit flat, position one on each corner and one on the top of the castle to make towers.Remove candy rings from bracelets, position four rings on each lollipop stick, gently push lollipops into each tower; position flags. Position sugar cubes using picture (above) as a guide.Using scissors, trim wafers into shapes for windows, door and drawbridge; position on cake.To make chains for drawbridge: cut 2 bamboo skewers to about 12cm in length. Position a Mallow Bake at the end of each skewer to hold the candy rings in position. Slide the candy rings onto the skewers; using picture as a guide, position on cake.Also, remember to remove the skewers from the drawbridge before cutting the cake!
