TIP – Instead of lining the air fryer basket with foil, try using a disposable foil tray. Find them near the food wraps in supermarkets.

Method
For the Chimichurri, process all ingredients in a food processor until finely chopped.
Place prawns in a large bowl. Add ½ cup chimichurri. Toss to coat. Cover and refrigerate for 1 hour. Reserve remaining chimichurri in a container in the fridge.
Lightly spray a 7-litre air fryer basket and wonton wrappers with olive oil. Place four wrappers into basket in a single layer. Cover with a piece of foil and weight down with two metal forks or spoons (this will stop them from blowing around the air fryer). Air fry on 200°C for 5 mins, turning wrappers halfway through, until golden and crisp. Transfer to wire rack to cool. Repeat with remaining wrappers.
Line the air fryer basket with foil to cover base and come 3cm up the sides of basket. Transfer prawns to the foil-lined basket. Air fry on 200°C for about 10 mins, turning prawns halfway through, until cooked.
Serve wonton wrappers with prawns, extra parsley, reserved chimichurri and lemon wedges.
