Pizza with a Greek twist.
2 x 26cm Greek pita breads
3⁄4 cup hummus
250g punnet cherry tomatoes, halved
1 red capsicum, cut into thin strips
200g block Greek feta, crumbled
1⁄4 cup drained sliced kalamata olives
500g lamb souvlaki strips
Baby rocket leaves and extra virgin olive oil, to serve
Place bread on two large oven trays. Spread evenly with hummus. Top with tomato, capsicum, feta and olives.
Cook in a very hot oven (220C) for about 8 minutes, or until golden and crisp.
Meanwhile, heat a lightly oiled, non-stick frying pan over a medium to high heat. Add lamb in two batches. Cook, stirring occasionally, for about 3 minutes, or until just cooked. Remove.
Top pizzas evenly with lamb and rocket. Drizzle with oil.
TIP: Lamb souvlaki strips are marinated in garlic, lemon and herbs, available in sealed plastic bags from Coles’ refrigerated meat section. Greek pita bread is available from independent supermarkets and delicatessens.
