Ingredients
4 pita pockets, warmed
Shredded cos lettuce, sliced red onion, Ajvar and lemon wedges, to serve
PATTIES
500g lamb mince
½ cup shredded parmesan
1/3 cup dried breadcrumbs
1/3 cup finely chopped fresh parsley leaves
1 egg, lightly beaten
2 cloves garlic, crushed
2 tblsps Dijon mustard

To make patties, place all ingredients in a large bowl. Season with salt and pepper. Mix well. Using wet hands, shape ¼ cup of mixture into patties, flatten slightly.

Pull out pan and basket from a 7-litre air fryer. Spray basket with oil. Place patties in basket in a single layer. Spray with oil. Turnover. Spray again. Slide pan and basket back into air fryer. Set temperature to 180C. Set timer and cook for 12 to 15 minutes, turning once until golden and cooked through.

Meanwhile, heat a lightly oiled, large, non-stick frying pan over a high heat. Add pita in batches. Cook for about 2 minutes on each side or until charred.

Serve patties with pita pockets, lettuce, onion, Ajvar and lemon wedges.
