“It was hard to put together because of the time difference from Australia to Ireland,” Sarah explains.
“We would go to work [on Home and Away] all day, and then come home and wait for the Irish to wake up so we could call and email.”
Jimmy, 43, shares: “I don’t know how she did it!”
In what can only be described as a perfect day, Sarah, 34, knew things were off to a great start when she kept seeing signs.
“We had a lot of good omens,” she explains. “Jimmy’s favourite number is 22 and I kept seeing it everywhere! There were lots of other things that happened that made me feel so content.”
Flying in a few days before the big day, Sarah and Jimmy were overwhelmed with emotion for their nearest and dearest.
“They’d flown so far. I’ve done that flight a lot and it’s not easy. And they spent so much money so the people that were there were really special to us. It was perfect in that sense.”
Sarah shares: “It was completely surreal. And I love calling him my husband.”
The couple are so excited about their new life together – one they say “already feels different”.
“It’s a fresh start for us,” Jimmy describes.
And as a brand-new family, a move might be on the cards for Jimmy, Sarah and Scout.
“There’s a couple of plans on the table,” Jimmy says. “We might eventually move somewhere new. Work permitting!”
Sarah and James told WHO that they can't wait to add to their brood.
James admitted when the time comes: "Oh my lord, she’ll be over the moon! And she’ll be a great helper. She’s going to be the best big sister."
