Ingredients
4 tblsps extra virgin olive oil
1 clove garlic, minced
Zest and juice of one lemon
300g peeled raw (green) prawns
1 tblsp red wine vinegar
2 green shallots, thinly sliced
1/2 cup mint leaves, roughly torn, plus extra to garnish
1/4 cup dill fronds, roughly torn, plus extra to garnish
180g block haloumi, sliced into batons
1kg seedless watermelon, rind removed, sliced into small thin triangles, chilled
Method

Combine oil, garlic, and lemon zest in a bowl. Add prawns, toss to coat.

Place the Philips XXL grill master accessory into the basket of your Philips XXL airfryer with Smart Sensing technology. Preheat the grill plate by setting temperature to 200C and time to five minutes.

Arrange prawns on the hot grill plate. Set temperature to 200C and time to 6 minutes.

Transfer cooked prawns to a clean bowl. Add lemon juice, vinegar, shallots, mint, dill and extra oil. Season. Toss to coat. Set aside.

Arrange halloumi (no need for oil) on the hot grill plate. Set temperature to 200C and time to 4 minutes cooking until golden on one side and grilled on the other.

Place watermelon, hot haloumi and prawn mixture onto a serving platter. Garnish with extra herbs and serve immediately.
