Balls can be made up to one week ahead. Keep in an airtight container in the fridge. Medjool dates are available from the fruit and vegetable section in major supermarkets. Replace peanut butter with almond or cashew butter, if preferred.
1 cup unsalted cashews
250g fresh Medjool dates, pitted
1⁄4 cup crunchy peanut butter
1 1⁄2 cups Rice Bubbles
1⁄2 cup Dark Choc Bits
Process cashews in a food processor until finely chopped. Add the dates and peanut butter. Process until combined.
2 Add Rice Bubbles and chocolate. Pulse until combined.
3 Roll tablespoons of the mixture into balls. Place on a tray or in small paper cases. Refrigerate, covered, for about 2 hours, or until cold. Serve.
