When ALDI put this delicious Cauliflower & Cheese recipe on their Instagram, it’s no surprise that it got the big thumbs up from their thousands of followers.
Oozing with cheese and looking as yummy as hell, it looks like every cauliflower lover’s dream come true.
But it was ALDI’s mention that the recipe is Keto approved that really caught our attention. After all, how can something so decadent looking be good for our waistlines?!
Keto, of course, is the diet phenomenon of 2018 which works by cutting out specific foods and food groups to put your body into a state of ketosis - where it will burn fat instead of carbs.
Followers of the diet are encouraged to cut out all refined sugars, carbs including pasta, bread, rice and chips and focus on eating whole foods such as fish, meat and veggies.
So while cheesy treats such as cauliflower and cheese might be banned on some eating plans - this recipe gets the big Keto tick of approval.
Cauliflower mac and cheese is a delicious treat for the family and super easy to make. Instead of macaroni, boil cauliflower florets until tender, drain and mix in Greek yogurt, cheddar cheese and mozzarella until combined.
