4 frozen, crumbed chicken burgers
4 bagels, split horizontally
1⁄3 cup chipotle aioli
2 cups shredded iceberg lettuce
2 vine-ripened tomatoes, sliced (260g)
Pickled bread and butter cucumbers, extra chipotle mayonnaise, and potato wedges, to serve
Cook chicken from frozen, according to packet directions.
2 Meanwhile, heat a large, non-stick frying pan over a medium to high heat. Add bagels, cut-side down, in two batches. Cook for about 2 minutes, or until lightly toasted. Remove.
3 Spread aioli over one cut side of each bagel. Top with lettuce, chicken, tomatoes and cucumbers. Drizzle with extra mayonnaise. Top with remaining bagel halves.
4 Serve with wedges.
