Ingredients
1 2/3 cups self raising flour
1/2 tsp bicarbonate of soda
2/3 cup firmly packed brown sugar
1 cup mini marshmallows
3/4 cup Milk Choc Bits
1 cup mashed ripe banana
2 eggs, lightly beaten
75g unsalted butter, melted, cooled
2 tblsps milk

Line a 12-hole muffin pan (1/3 cup capacity) with deep paper cases.

Sift flour and soda into a large bowl. Stir in sugar and 1/2 cup each of the marshmallows and Choc Bits. Make a well in the centre.

Add banana, eggs, butter and milk. Stir until just combined (Do not over-mix).

Divide evenly among paper cases. Sprinkle with remaining marshmallows and Choc Bits.

Cook in a moderate oven (180C) for about 20 minutes, or until muffins are cooked when tested with a skewer, Stand in pan for 10 minutes. Transfer to a wire rack.

Serve muffins warm or at room temperature.
