Ingredients
2 x 100g packets sliced prosciutto, halved
100g packet sliced spicy salami
300g punnet medley tomatoes, halved
8 slices mortadella, halved
2 x 180g tubs cherry bocconcini, drained
280g jar marinated artichokes, drained
465g jar roasted capsicum, drained, cut into 3cm pieces
230g jar pitted green olives, drained
24 x 15cm wooden skewers
Fresh basil leaves, caramelised balsamic and extra virgin olive oil, to serve
Method

Thread the prosciutto, salami, tomatoes, mortadella, bocconcini, artichockes, capsicum and olives alternatively onto the wooden skewers.

Arrange skewers around the edge of a large round serving plate or board to resemble a wreath. Cover and refrigerate until ready to serve.

To serve, garnish the platter with basil leaves. Drizzle the skewers with balsamic and olive oil.
