250g punnet fresh strawberries, hulled
560g can lychees, drained
750ml bottle prosecco, chilled
3 cups pineapple juice, chilled
1.25l bottle lemonade, chilled
1 cup vodka
PASSIONFRUIT ICE CUBES
½ cup fresh passionfruit pulp (about 4 passionfruit)
1 cup pineapple juice
To make ice-cubes, combine passionfruit pulp with juice in a medium jug. Pour evenly into two x 14-hole ice cube trays. Freeze.
Cut limes and strawberries into thin slices. Drain lychees. Place in separate bowls. Refrigerate, covered.
Just before serving, pour prosecco, juice, lemonade and vodka into a punch bowl. Gently stir to combine. Add passionfruit ice cubes, limes, strawberries and lychees.
TIP: Prosecco is a sparkling wine with fruity, citrus flavours. Pineapple juice can be replaced with pine mango or apple juice. Buy a double quantity of ingredients in case you need to make extra punch. Have the limes, strawberries and lychees prepared, as well as the ice cubes.
