Chilli lime salt can be made up to three days ahead. Store in an airtight container. Sweet potato can be replaced with 1kg baby chat potatoes, if you prefer.
1kg sweet potato, scrubbed, washed
2 tblsps olive oil
2 cloves garlic, crushed
Cracked black pepper, to taste
2 tblsps sea salt flakes
2 tblsps finely chopped fresh parsley
2 tsps finely grated lime rind
1⁄2 tsp dried chilli flakes
Cut potato into 2cm rounds. Place in a large bowl with combined oil and garlic. Season with pepper. Toss to coat. Arrange in a single layer in a large, oiled roasting pan.
Cook in a hot oven (200C), turning halfway through, for about 35 minutes, or until golden brown and tender.
Meanwhile, to make salt, combine all ingredients in a small bowl.
Serve salt sprinkled over hot potato.
