1kg sweet potato, scrubbed, washed
2 tblsps olive oil
2 cloves garlic, crushed
Cracked black pepper, to taste
2 tblsps sea salt flakes
2 tblsps finely chopped fresh parsley
2 tsps finely grated lime rind
1⁄2 tsp dried chilli flakes
Cut potato into 2cm rounds. Place in a large bowl with combined oil and garlic. Season with pepper. Toss to coat. Arrange in a single layer in a large, oiled roasting pan.
Cook in a hot oven (200C), turning halfway through, for about 35 minutes, or until golden brown and tender.
Meanwhile, to make salt, combine all ingredients in a small bowl.
Serve salt sprinkled over hot potato.
