Ingredients
TIP: To keep fritters warm, place on an oven tray. Cover lightly with foil. Place in a very slow oven (120C).
Method
Step 1
Place flour into a large bowl. Add eggs, sweet potato, currants, curry powder, and 1/2 cup of the mint. Season with salt and pepper. Mix well.
Step 2
Heat enough oil in a large, deep frying pan to shallow-fry over a medium heat. Add 1 tblsp of the mixture, spreading slightly to make a small fritter. Repeat to make six more.
Step 3
Cook for about 2 minutes on each side, or until golden brown. Remove. Cover to keep warm. Repeat with remaining mixture to make about 24 fritters in total.
Step 4
Combine yoghurt and remaining mint in a small bowl.
Step 5
Serve warm fritters with minted yoghurt and lemon wedges. Garnish with mint leaves.
