Ingredients
2 x 400g packets potato with butter and herb
8 pork loin medallions (700g)
2 tsps smoked paprika
2 cloves garlic, crushed
Salt and pepper, to taste
SAUERKRAUT SALAD
1 cup Polish sauerkraut
1 Pink Lady apple, cored, coarsely grated
2 stalks celery, thinly sliced
1⁄2 small red onion, finely chopped
2 tblsps white wine vinegar
2 tsps caster sugar
Salt and pepper, to taste
Method

Cook potatoes according to packet directions.
2 Meanwhile, combine the pork, paprika and garlic in a large bowl and season with salt and pepper. Toss to coat.
3 Heat an oiled, large, non-stick frying pan over a medium to high heat. Add pork in two batches. Cook for about 3 minutes on each side, or until cooked. Remove. Rest, loosely covered with foil for 3 minutes.
4 To make salad, combine all ingredients in a large bowl.
5 Serve pork with sauerkraut and potatoes.
