4 medium ripe yellow peaches, peeled, chopped
1/3 cup passionfruit pulp, plus extra to serve
2 tblsps icing sugar mixture
300ml tub thickened cream
1½ cups French Vanilla Double Thick Custard
4 x 10g meringue nests, coarsely crushed
Thinly sliced peach, to serve
Combine peaches, passionfruit and icing sugar in a medium bowl. Gently stir to combine.
Beat cream in a small bowl of electric mixer until firm peaks form. Fold in custard and meringues.
Layer half the peach mixture and half the cream mixture among four x 1 cup-capacity serving glasses. Repeat layers with remaining peach mixture and cream mixture.
Just before serving, top with peach slices and extra passionfruit.
