1.2kg chicken thigh fillets, trimmed
12 x 25cm wooden skewers
Tzatziki, warm pita bread and chopped tomato and cucumber, to serve
2 tblsps olive oil
2 tblsps lemon juice
2 cloves garlic, crushed
2 tsps dried oregano
1 tsp smoked paprika Salt and pepper, to taste
Cut chicken into 3cm pieces.
2 To make marinade, combine all ingredients in a large bowl. Add chicken. Toss to coat. Refrigerate, covered for 1 hour.
3 Thread chicken onto skewers.
4 Heat an oiled, large, chargrill plate over a medium to high heat. Add skewers. Cook, turning occasionally, for about 10 minutes, or until cooked through. Remove.
5 Serve skewers with tzatziki, pita bread, and tomato and cucumber.
