1/2 cup milk
2 green spring onions,
1/2 cup semi-dried tomatoes, coarsely chopped
1 cup grated cheddar cheese
Salt and pepper, to taste
Tomato relish, to serve
Grease an oval ovenproof dish (8-cup capacity).
Place only noodles in a saucepan of boiling water, reserving noodle sachet. Boil
for 2 minutes. Drain well.
Spread noodles over base of prepared dish.
Whisk eggs and milk in a large jug until combined. Add noodle sachets, onions, tomatoes and half the cheese. Season with salt and pepper. Mix well. Pour over noodles in dish. Sprinkle remaining cheese over the top.
Cook, uncovered, in a moderate oven (180C) for about 25 minutes, or until set. Remove. Stand for 5 minutes.
Serve warm frittata with tomato relish.
