A simple breakfast for the kids.
Salt and pepper, to taste
1 tblsp olive oil
80g sliced leg ham, chopped
1⁄2 cup grated Tasty cheese
2 burrito tortillas, warmed
2 tblsps medium taco sauce
Fresh coriander sprigs, to serve
Whisk eggs seasoned with salt and pepper in a bowl until combined.
Heat oil in a medium, non-stick frying pan over a medium heat. Add ham. Cook, stirring, for about 4 minutes, or until lightly golden.
Pour egg mixture over ham. Cook over a medium heat, without stirring, for 30 seconds, or until edges start to set. Using a wooden spoon, drag egg from side-to-side until large curds form and egg mixture is almost cooked. Remove from heat.
To serve, divide cheese between tortillas. Top evenly with scrambled egg mixture. Spoon over taco sauce.
Serve with coriander sprigs.
