For a different flavour, replace blueberries with frozen raspberries, and lemon cake mix with vanilla cake mix.
800g can sliced apple pie fruit
1 cup frozen blueberries
470g packet lemon cake mix
50g unsalted butter, melted
1⁄3 cup natural sliced almonds
Spread combined pie fruit and frozen blueberries over base of a rectangular, oven-proof dish (8-cup capacity).
2 Empty cake mix into a large bowl. Reserve icing mix sachet for another use. Add butter and 1⁄2 cup water. Stir to combine. Spoon topping over fruit, almost to the edges. Sprinkle with almonds.
3 Cook in a moderate oven (180C) for about 35 to 40 minutes, or until topping is golden brown and cooked through. Remove from oven. Stand for 10 minutes.
4 Serve hot with ice-cream (optional)
