Related recipe: French Onion Potato Bake
4 x 220g-250g brushed potatoes
225g can pineapple pieces in juice
150g shaved leg ham, torn
1 1/3 cups grated pizza cheese
Wash and scrub potatoes. Place in a microwave-safe dish, in a single layer, with 2 tablespoons water. Cover with damp absorbent kitchen paper. Microwave on High (100%) for about 10 minutes, or until tender. Remove from dish. Cool slightly.
Measure out ½ cup drained, pineapple pieces, reserving remaining for another use.
Make a vertical cut through the top of each potato, about halfway. Place on an oven tray lined with baking paper. Fill potatoes with pineapple and ham. Sprinkle with cheese.
Cook in a very hot oven (220C) for about 10 minutes, or until cheese is melted and golden.
Serve with rocket leaves (optional).
TIP! Ham can be replaced with shredded, roast chicken meat, or pan-fry 200g chopped shortcut bacon rashers until lightly browned.
