Ingredients
1⁄4 cup plain our
1 tsp garlic salt
25g sachet Nando’s Peri Peri Medium Rub
1kg pack chicken wing nibbles (about 20)
1⁄4 cup whole egg mayonnaise
1⁄4 cup water
3 cups fresh breadcrumbs (225g)
Cooking oil spray
Lemon wedges and fresh coriander sprigs, to garnish (optional)
DIPPING SAUCE
1⁄2 cup whole egg mayonnaise
2 tblsps sweet chilli sauce
2 tblsps chopped fresh coriander
1 tblsp lemon juice
Method

Combine our, salt and 1 tablespoon of the peri peri rub in a large bowl. Add chicken. Toss to coat.
2 Whisk mayonnaise and water in a shallow dish. Combine breadcrumbs and remaining rub in a separate shallow dish.3 In four batches, dip chicken into mayonnaise mixture, then toss in breadcrumb mixture, pressing on lightly. Place on two oven trays lined with baking paper. Spray with cooking oil.
4 Cook in a hot oven (200C), swapping trays halfway through, for about 30 minutes, or until golden and cooked through.
5 Meanwhile, to make sauce, combine all ingredients in
a bowl until smooth.
6 Serve chicken with sauce. Garnish with lemon and coriander.
